1 cup sugar
1 cup shortening
2 eggs, beaten
¼ cup milk
2 cups flour
2 cups oats
1 tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
1 tsp. cinnamon
1 cup pecans, chopped
1 tsp. vanilla

Directions:
Directions:
Cream shortening, sugar and eggs.

Mix in a large bowl the flour, oats, baking powder, baking soda, salt, cinnamon, and pecans.

Combine both mixtures adding only enough milk to make a stiff dough,

Drop on cooking sheet 1 inch apart.

Bake at 350º for 10-12 minutes. Yields 4 dozen cookies

Ernestine King Holeman was married to Cloyce T. Holeman. They had 2 children, Ella LaWayne Holeman Boney and Jimmy Cloyce Holeman. They both were excellent cooks and every year up to 1999 they entertained their children, grandchildren, and great-grandchildren for Thanksgiving and Christmas and any other weekend the family could gather at their house. They would never allow anyone to contribute by bringing a dish. They were in their mid-to-late eighties. Their food was amazing and prepared with love.
