3 Eggs
1 cup Vegetable Oil
2 cups Sugar
2 cups Zucchini, shredded
3 cups Flour
1 teaspoon Salt
1 teaspoon Baking Soda
3/4 teaspoon Nutmeg
1 Tablespoon Cinnamon
1/4 teaspoon Baking Powder
1 Tablespoon Vanilla
1 cup Chocolate Chips (optional)

Directions:
Directions:
Mix all ingredients except zucchini and chocolate chips together. Add zucchini and chocolate at the end. Pour batter into 2 greased loaf pans and bake at 325º for 1 hour. Our family prefers to bake as muffins. Pour batter into greased muffin tins and bake at 325º for 20-25 minutes. Let muffins cool for a few minutes before removing from the pans, the edges will start to pull away slightly.
