Grandma's Turkey Stuffing Recipe

2 king size loaves white bread
2 eggs, beaten
2 onions, chopped
2 stalks celery, chopped
1 carrot, shredded
1 tbsp sage
1 tbsp thyme
salt and pepper to taste

Olive oil for cooking

Directions:
Directions:
Break bread into small cubes (1/2-inch) and place in very large bowl.
Add carrots and celery; mix well.
Moisten mixture and mix with hands.
Add seasonings and mix again; add eggs and incorporate thoroughly.
Heat olive oil in a very large frying pan or electric skillet.
Add stuffing mixture by spoonfuls.
Cook in batches, flipping and breaking up mixture until golden.
Serve as is, or stuff bird, alternating stuffing, tbsp butter.
Remove and serve.

My grandmother couldn't cook, but she could make this recipe.
Gluten free: substitute 4 loaves of gluten free bread for the white bread. Use less water, as GF bread will crumble easily.
Olive oil will be absorbed quickly into mixture when cooking. Add olive oil as needed with subsequent batches.
