1/2 cup brown sugar
1/2 cup butter
1 egg, slightly beaten
1 cup flour
1/2 tsp salt
1/2 tsp vanilla or almond extract
Finely chopped walnuts

Directions:
Combine all ingredients, except for the walnuts, in a small bowl until the mixture is thick and creamy. Form the mixture into small balls, dip them in egg whites, and sprinkle with finely chopped walnuts. Place them on an ungreased baking sheet. Create a dent in the center of each ball using a thimble or your thumb. Bake at 350°F for 5 minutes. Afterward, deepen the dent and return to the oven for another 10-15 minutes. Remove from the oven and promptly fill the holes with jam. For variations, you may substitute walnuts with pecans, coconut or jams.

I enjoy making these at Christmas and sub raspberry jam.
