1 cup cooked, mashed carrots
3/4 cup butter or margarine
1 egg
Grated rind of 1 orange
1/2 tsp vanilla extract
1/2 tsp salt
1 cup sugar
2 cups sifted flour
3 tsp baking powder

For the icing:
2 tbsp butter
2 tbsp flour
1/3 cup orange juice
Grated rind of 1 orange
1 1/2 cups icing sugar

Directions:

Cream the butter and sugar together, then mix in the egg, vanilla, carrots, and orange zest. Sift the baking powder and flour together and add to the mixture. Chill the dough, then drop walnut-sized spoonfuls onto a greased cookie sheet. Bake at 375°F for 12-15 minutes.
For the icing: Melt the butter and stir in the flour. Add the orange juice and rind, and cook over low heat until the mixture thickens. Stir in the icing sugar and beat until smooth. Spread the icing on the cooled cookies.
