3 bananas
1 egg
3/4c sugar
2 T oil (can substitute unsweetened applesauce)
1 t. Baking soda
1 t. Baking powder
2c flour
1c chocolate chips or nuts (optional)

Directions:
Directions:
Preheat oven to 350 degrees.
Grease loaf pan.
Mash bananas in a bowl, add eggs, sugar and oil.
Sift together the remaining ingredients in a separate bowl.
Combine wet and dry ingredients together.
If desired, you can add 1c of chocolate chips or nuts by folding into the mixture.
Pour into greased loaf pan.
Bake about 50 minutes

We love having banana bread as a breakfast treat! I often double the recipe so I can freeze the second loaf (I usually freeze it in two halves), in case someone is craving it on a busy weekend.
