2 eggs *beat well
⅔ cup Wesson Oil
2 tsps. Vanilla
1 tsp. grated lemon rind - optional
Stir in well with eggs.....then blend in until mixture thickens;
¾ cup Sugar

Mix together and stir into the above....
2 cups Flour
2 tsps. Baking Powder
pinch Salt

Directions:
Directions:
Drop by teaspoonfuls about 2 inches apart on ungreased baking sheet. Flatten with greased bottom of glass dipped in sugar. Bake until a delicate brown. Remove immediately from baking sheet.

Bake at 400º for about 8-10 minutes.
Makes about 3 dozen - 3 inch cookies.

Note: These cookies expand quite alot.
