Basic Raised Sweet Dough:

½ cup softened butter or shortening.
¼ cup sugar
1 cup scalded milk
¼ tsp. of powdered mace
¾ tsp salt
2 eggs well beaten
1 cake compressed yeast
2 T. sugar
4 cups sifted all-purpose flour
Dry bread crumbs
Extra soft pieces of butter

Plum mixture:

Plum 20-25 Italian purple plums – 1 kuchen, 40 purple plums large kuchen, washed split and pitted
½ tsp. Cinnamon (1 tsp for large)
½ cup Sugar (1 cup for large)
2 T. melted butter (4 T. for large)
1 T. Cream (milk okay to use) (2 T. for large)
1 egg yolk (2 yolks for large)

To Make Basic Raised Sweet Dough (for large or 2 medium size kuchens)

Pour scaled milk over butter, sugar and salt. When cool, stir in beaten eggs, then yeast which has been combined with the 2 T. of sugar. Mix in mace and flour, a little at a time to form a soft dough. (It may not use all 4 cups of flour, watch as you mix). When too stiff to mix with a spoon, turn out on floured pastry cloth or board, knead in only enough flour to form a soft dough. Knead gently several minutes until smooth, shape into a ball. Place in a well-greased bowl, brush top of dough with some butter, cover and let dough double in size. Then roll out onto cloth or board, knead for few minutes and return to greased bowl, repeating process, allow to rise until double again.

For two medium Plum Kuchen: Divide dough in half, shape each into a smooth ball. Pat and roll one ball to fit a 10 inch round pan or a 8 x 8 inch square pan. Pans well-greased. Pull and stretch dough to bring it up 1 inch on sides. Sprinkle with softened bread and 3 T. crumbs.

For large Kuchen use all of dough and a large rectangle greased baking pan,9.5 x 13 inches or similar..

Take split plums and place on dough, skin side down, in order not overlapping.
Sprinkle with sugar mixed with cinnamon.
Combine melted butter, egg yolk, cream and drizzle over plums.
Let sit for 15 minutes.

Bake in 350-degree oven 50 minutes or until crust is brown, plums are soft.
