1 c butter, browned then slightly cooled
1 1/2 c brown sugar
1/4 c granulated sugar
2 eggs
1 tbsp vanilla
2 c all-purpose flour
2 c rolled oats, toasted then cooled (in the oven at 375º for 7 -10 minutes)
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp Himalayan pink salt
1 c dates, pitted and chopped
2/3 c milk chocolate chips

2 tsp coconut oil

Directions:
Directions:
Preheat oven to 350ºF. Line two large baking sheets with parchment paper.
Cream browned butter with both sugars.
Blend in eggs and vanilla and blend well, until light and creamy, about 5 minutes.
Stir in flour, oats, baking powder, baking soda, and salt.
Stir in dates and chocolate chips. If you add the dates too early, they will fill up with flour.
Scoop onto baking sheets then bake until lightly browned around edges and no longer shiny on top, about 14 minutes.
Melt remaining 2/3 c chocolate chips with coconut oil. Stir until completely smooth.
Dipped about 1/3 of cooled cookie in melted chocolate then place on parchment paper to let it set.
Sprinkle with a little Himalayan pink salt, if desired.
