Ingredients: 1 8 OZ. CAN ALMOND PASTE OR ALMOND PIE FILLING 1 CUP SUGAR 1 1/2 CUP BUTTER 1 TSP. ALMOND EXTRACT 12 OZ. STRAWBERRY JELLY 4 EGGS 2 CUPS FLOUR 2 TBSP. MILK ONE BAG CHOCOLATE CHIPS-SEMI SWEET 1/2 TSP. SALT 3 9 X 13 BAKING PANS

Directions:PREHEAT OVEN TO 350 DEGREES. GREASE PANS-LINE WITH WAX PAPER-GREASE THE WAX PAPER. BREAK UP ALMOND PASTE/PIE FILLING WITH A FORK. SEPARATE EGG YOLKS AND WHITES, SAVE BOTH. ADD EGG YOLKS TO ALMOND PASTE AND ALMOND EXTRACT. BEAT UNTIL LIGHT AND FULLY, ABOUT FIVE MINUTES. BEAT IN FLOUR AND SALT. BEAT EGG WHITES UNTIL STIFF AND STIR INTO SPREAD INTO ALMOND MIXTURE. REMOVE 1 1/2 CUP OF BATTER AND PLACE INTO THREE DIFFERENT BOWLS. ADD GREEN, YELLOW AND RED FOOD COLORING INTO THE THREE BOWLS AND STIR. SPRAY EACH PAN (3 TOTAL) WITH COOKING SPRAY AND SPREAD THE BATTER INTO EACH PAN. BAKE FOR 15 MINUTES OR UNTIL EDGES ARE SLIGHTLY BROWN. REMOVE CAKES IMMEDIATELY FROM PANS AND COOL ON WIRE RACKS. HEAT JELLY AND SPREAD 1/2 BETWEEN GREEN AND YELLOW LAYERS. WEIGH DOWN WITH LARGE WOODEN CUTTING BOARD OR TELEPHONE BOOK.
LET SIT OVERNIGHT.
TRIM CAKE SO EDGES ARE EVEN.
MELT CHOCOLATE OVER DOUBLE BOILER. FROST ENTIRE CAKE WITH CHOCOLATE USING SPATULA ON ALL SIDES BUT THE BOTTOM. LET CHOCOLATE DRY AND CUT INTO 1 INCH PIECES. |
