¾ c. butter
1½ c. sugar
1 egg
1 tsp. vanilla
1½ c. grated zucchini
2½ c. flour
2 tsp. baking powder
1 tsp. cinnamon
½ tsp. salt
1 c. chopped almonds
1 c. semi sweet chocolate pieces

Directions:

Preheat oven to 350º F.
Cream butter with sugar. Beat in egg and vanilla; mix in zucchini. Stir in flour, baking powder, cinnamon and salt. Stir in almonds and chocolate chips. Drop by heaping teaspoonfuls onto greased or parchment covered cookie sheet. Bake for 15 minutes or until lightly browned. Cool on wire rack. Sieve powdered sugar over cookies, if desired.

This recipe was published in the Indiana Rural News in the February 1977 issue. Mom probably cut it out because she was always looking for ways to use up all the zucchini her garden produced.
