3 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, at room temperature
1 cup sugar
1 large egg + 1 egg white (1/4 c + 1 T total measure of egg volume)
1 teaspoon pure vanilla extract

Spoon and level off flour into measuring cup, then add to medium bowl. Add baking powder and salt. Whisk together and set aside.

In an electric mixer fitted with the paddle attachment, beat together butter and sugar until light and fluffy, about 2 minutes. Add egg and vanilla and mix well. Add flour mixture and mix until just combined. It should be the consistency of soft play dough. Divide the dough into 4 equal parts, shape into 4 discs, wrap with plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 350ºF. Roll out dough to desired thickness (around 1/8 inch for crispy cookies, 1/4 inch for a softer cookie). Cut out cookies to desired shapes. Decorate with colored sanding sugar and sprinkles.

Bake for 8-9 minutes until the edges are golden. Remove from oven and let cool for 5 minutes before transferring to a wire rack.

I love a good butter cookie. I modestly adapted this recipe from one the kids have been begging to make that we found in the back of a Christmas book, “Nonna Tell Me a Story”, by Lidia Bastianich.

They are delicious. Also, I think they are easier to make than regular cutout cookies because you decorate them with sugar and sprinkles before you bake them. No frosting hassle. And they are yummy!
