1 Large Pizza dough (either made or bought)

Oil for frying
4 ounces of shredded mozzarella
8 ounces of ricotta cheese
1/4 cup grated pecorino cheese
1 egg
1 Tbs. chopped parsley
1 tsp black pepper
I don't use salt because the cheeses are salty enough
You can add ham or salami
Marinara sauce for dipping

Mix all, (except the oil and dough) Set aside. Set up your fryer and heat the oil.

Meanwhile work the pizza dough until the desired thickness is obtained. Cut dough into 4 inch squares. Put a scoop of cheese in the middle of the dough Wet only 3 edges of the dough and fold it over to close. Seal with a fork or your fingers to close it tightly.

Fry in the oil until lightly browned. Drain on paper towels


Can be frozen. Heat in an oven or toaster oven. The microwave makes them soggy.
