4 eggs
2 cups sugar
3/4 cup salad oil or applesauce
2 tsp coconut flavoring
3 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup buttermilk
1 cup coconut
1 cup chopped nuts (optional)

Glaze:
1 cup sugar
1/2 cup sugar
2 tsp butter
1 tsp coconut flavoring

Directions:
Directions:
In a bowl beat the eggs. Add the sugar, oil, and coconut flavoring; blend well. In a separate bowl sift together flour, baking soda, baking powder, and salt. Beat in dry ingredients a little at a time in first bowl with buttermilk. Fold in coconut and nuts (optional). Pour into greased and floured pans. Bake at 325 for 50-55 minutes. Makes 3-4 medium loaves.

For the glaze, combine in a saucepan sugar, water, and butter; boil for 5 minutes. Remove from heat and add coconut flavoring; mix well. Pour hot glaze over the bread and do not take out of pans for at least 4 hours.
