"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 cup white sugar
1 cup brown sugar (dark or light or combination)
1 ˝ cup Crisco / butter (I use a combination of both)
1 teaspoon vanilla
3 large eggs, beaten
1 cup chopped pecans
4 cups all-purpose flour
1 teaspoon cinnamon
2 teaspoons cloves
2 teaspoon baking soda
1 teaspoon nutmeg

Directions:
Directions:
Cream sugars with softened butter / Crisco. Blend in 3 eggs & vanilla. In separate bowl add flour, cinnamon, cloves, baking soda & nutmeg – shift mixture 4 times so that it is very well blended and discard any pieces that do not go through the sifter. Add dry mixture into creamed mixture, a small amount at a time, until all is incorporated. Mix or kneed in the nuts by hand. Separate mixture into 4ths and put each 4th on waxed paper, making a long log. Wrap-up in waxed paper & chill several hours or overnight before slicing. Bake at 350 for 8 to 9 minutes until JUST set. The cookies crispen up with age and will be perfect the day after baking. Store in closed containers. This recipe is old-fashioned - not too sweet and slightly ‘cinnamony.’
