6 TBSP butter - divided
1 green pepper - seeded and diced
1 carrot - peeled and diced
1 stalk celery - diced
1 small onion - diced
1/2 cup all purpose flour
2 and 1/2 quarts of warm milk
1 and 1/4 cup chicken broth
1 cup shredded American cheese
3/4 cup shredded cheddar cheese
1/4 cup beer or ale

Directions:
1. Heat 3 TBSP butter and sauté pepper, carrot, celery, and onion about 10 minutes
2. Remove veggies from pan and set aside
3. Heat the remaining 3 TBSP butter and whisk in flour, cook for 2-3 minutes or until it foams and bubbles
4. Remove from heat and add warm milk and broth - whisk and blend well
5. Return to heat and stir until smooth and thick (about 10 minutes) then add cooked veggies to heat through.
6. Reduce heat to very low and add the cheeses (stir till melted)
7. Stir in beer/ale, and heat through again - taste for seasoning. Cheeses may be salty enough, so you may not need more seasoning.
