For the Filling

1 Cup creamy Peanut Butter
1/2 Cup powdered Sugar

For the Cookies
1/2 Cup Butter Softened
1/2 Cup Creamy Peanut Butter
1/2 Cup packed brown sugar
1/4 Cup granulated sugar, plus more for rolling
1 large egg
1 tsp. pure vanilla extract
1 1/2 Cups of all purpose flour
1/2 tsp. baking soda
1/2 tsp. kosher salt

Pre heat oven to 375 degrees F and line two large baking sheets with parchment paper

Make Filling: In a medium bowl stir together peanut butter and powdered sugar until smooth. Using a small cookie scoop, scoop 22 balls of peanut butter mixture onto one prepared sheet and freeze until firm 30 minutes.

Make cookies: In a large bowl using a hand mixer, beat butter, peanut butter, and sugars until fluffy, add egg and vanilla and beat until incorporated, then add flour, baking soda, and salt and beat until just combined.

Using a medium cookie scoop, scoop 22 balls of dough (about 1 1/2 Tablespoons each) and flatten into a pancake like circle. Top with a frozen peanut butter ball and cover with dough, Pinching edges to seal adding more dough if necessary to completely enclose. Transfer to prepared baking sheets a repeat with remaining dough and frozen peanut, spacing cookies 2 inches apart.
Bake until golden on the bottom 12 to 15 minutes.
