Wafers:
1 C butter
⅓ C whipping cream
2 C flour
Sugar - for sprinkling
Filling:
¼ C butter, room temperature
¾ + powdered sugar
1 tsp vanilla
food coloring of choice

Directions:
Directions:
1. Mix all wafer ingredients, then cover and chill.
2. Heat oven to 375ºF.
3. Roll ⅓ of dough at a time to approximately ⅛ inch thick and cut in 1½ inch rounds. . Place on ungraded cookie sheet. Sprinkle with sugar and use a fork to pierce wafer 2-3 times. Bake for 7 to 9 minutes - just until starting to brown on edge bottom.
4. Cream filling ingredients and add food coloring. May add a few drops of hot water and additional powdered sugar if desired.
5. When cooled, ice wafer and add top for a delicate "sandwich" cookie.
