12 egg whites
5 lbs raw almonds + 1 lb (to set aside)
1 envelope vanilla sugar
1 tbsp baking powder
Zest of 2 lemons
125 ml natural almond extract
3 cups sugar

Directions:
Directions:
24 hours before you want to make the cookies, wash almonds quickly, do not soak. Leave them to dry overnight on a towel or dry in the oven, at 350º for approx 15 minutes. Watch them closely.

Once they are cool, grind all but 1 lb. (approx. 3 cups) of the almonds in a food processor until fairly fine.

Combine the dry ingredients.

Beat the egg whites until fluffy and stick when turned upside down.

Add the lemon zest, and almond extract.

Gradually and gently fold in egg whites with the dry mixture until well combined and sticky.

With wet hands form small balls loosely, then roll them in sugar and place them on a cookie sheet.

Cut whole almonds into pieces and top the cookies by pushing them down.

Bake in oven at 375º until the cookie rises (approx 5 min), then reduce heat and bake at 350º for and additional 7-10 minutes (12-15 minutes in total)
