1 cube of melted margarine
1/2 cup Molasses (use the one with the green label)
1 cup of sugar
1 tsp of vanilla
2 1/2 cups of flour
2 tsp of ginger
1 tsp of baking soda
1 tsp of salt

Directions:

Melt margarine

Pour margarine into molasses then pour over the 1 cup of sugar and vanilla. Mix well.

Sift together flour, ginger, baking soda and salt.

Mix dry ingredients in with the butter mixture until well mixed together.

Divide mixture into two balls, roll/form two long rolls. Cover each "log" with plastic wrap and refrigerate over night or for several hours.

Slice into 1/4 rounds and place onto greased cookie sheets.

Bake on 400* for about 6 minutes

I have the fondest memories of going over to my grandma's house and sampling all of her baked goods but especially her gingersnap cookies.

Note by Aunt Sharon: I made these cookies - so good! I was puzzled by "one cube of margarine". Wasn't sure if it was "one stick"? or what? Decided it was one cup of margarine - although I used butter.
