Corn tortilla (12 – 24)
1 ½ pound hamburger meat- browned and cooked through
½ cup oil
2 large onions
3 cloves garlic
3 Tablespoons flour
2 cans beef consume
1 cup water
2 – 8 oz. cans tomato sauce
1 large can Las Plumas Enchilada sauce or another brand
2 Tablespoons chili powder
Salt & pepper as desired

Directions:
In a large frying pan, put 1/2 cup oil, 2 large onions chopped finely and 3 cloves of garlic chopped. Add 3 large Tablespoon flour, 2 cans beef consume, 1 cup water, 2 cans tomato sauce, 1 cup Las Plumas enchilada sauce, 2 Tablespoon chili powder. Season to taste. Make into a gravy. Cool slightly.

Dip corn tortillas into the gravy to make tortillas more flexible. Fill each tortilla with cooked hamburger. At this time, cheddar cheese or sour cream can be added. Roll up the tortilla with meat and other things added. Place each tortilla in a large cake type pan.

Continue making the tortillas until the meat is gone. Pour extra gravy sauce over each pan of tortillas. More cheese can be added and green onions.

Bake until the cheese melts (350-degree oven).

I grew-up with these enchiladas and loved them. I have always preferred corn tortillas. When I make them now, I think it is lots of work, but sure good. When I went home for a visit, I would ask mom to make them for me. Now, I make things for her.
