3 egg whites
1/3 cup Pecans
21 Ritz Crackers
1 cup sugar
1 tsp vanilla

Filling:
8ox Cream Cheese
3/4 cup confectioners sugar

Topping:
8 oz crushed Pineapple (drained)
1/2 pint whipping cream (whipped)

Crust:
Crush crackers and pecans
Beat egg whites until stiff
Gradually add sugar and vanilla
Fold in crushed nuts and crackers
Press in 10" pie pan
Bake for 30 minutes at 350º

Filling:
Combine cream cheese and confectioners sugar and spread in cooled crust

Topping:
Fold together crushed pineapple (drained) with whipped cream
Spread on top of pie
