¾ Cup old-fashioned oats
2 Tbsp. baking soda
Pinch of salt
½ Cup salted butter, melted, plus 2 Tbsp.
¾ Cup brown sugar, packed and divided
¼ Cup sugar
2 Lg. eggs
2 Tsp. vanilla
½ Cup white chocolate chips
3 Juici apples, cored and sliced, divided
1 Tsp. apple pie spice
Caramel sauce to taste

In large bowl whisk together flour, oats, baking soda and salt. In another bowl whisk ½ cup butter, ½ cup brown sugar, sugar, eggs and vanilla until smooth. Slowly add the dry ingredients until the dough takes shape. Stir in white chocolate chips; chill dough for 25 minutes.
Heat remaining butter in a cast-iron skillet. Stir in 2 of the sliced apples, ¼ cup brown sugar and apple pie spice. Saute apples until soft and fragrant, and top with caramel sauce. Cover the applies with a layer of chilled cookie dough. Bake for 20 minutes or until the cookie is firm. Allow to cool completely. Top with remaining apple slices.
