Ingredients: 1 c sugar, 1/2 c butter, room temperature 1 egg 2 c flour 1tsp baking powder 3/4 tsp cinnamon 3/4 tsp cloves 1/2 tsp salt 1 1/4 to 1 1/3 cup persimmon pulp 1 tsp baking soda 1 c raisins 1 c walnuts chopped

Directions: mix together the persimmon pulp and baking soda ands set it aside. In a separate bowl, cream together butter, sugar and egg. Mix the spices together a small container or baggie then mix them into the flour. Add the flour/spice to the creamed butter/sugar while mixing,(about 1/2 cup at a time) be sure to fully incorporate the flour before adding more. Gently add in the pulp -which should be gelatinous by now. next add raisins and walnuts.
Spoon the cookie dough onto parchment lined baking sheet and bake at 350º when edges begin to brown and cookies aren't shiny they are done (about 10 minutes).
If you can make this ahead and refrigerate for a day, the flavor is way better.

Notes: This cookie evokes so many memories for me. Bob Moss always showed up when mom was making cookies, never failed. Mom always multiplied this recipe several times. Otherwise, none would make it to our lunch bags the next day. What a treat they were to find in our brown paper bags. Today I cannot imagine making less than a quadruple batch.
They are my family's favorite cookie, and a sure sign that fall has arrived.
