2 small to medium eels
All purpose flour
2 eggs
Dash of salt (fine sea salt) to taste and pepper

Cut the eel in pieces about 3 inches, rinse them with running water and dry them well. They should be short and thin. Season with salt and pepper. Dredge the fish in egg, then flour, shaking off excess flour.

Fry the pieces in moderately hot oil, being careful not to crowd the pieces, until they are crisp and golden-brown on the outside. Drain them well on absorbent paper towel and season to taste with more salt and pepper.
