3/4 cup butter or margarine, softened
1/2 cup firmly packed brown sugar
1 egg separated
1/2 tsp vanilla
1 and 1/3 cup flour
1/4 tsp salt
1 cup finely chopped nuts
jam of choice, best without seeds

Directions:
Directions:
-Preheat oven to 350 degrees
-Cream butter and sugars; beat in egg yolk (save whites) and vanilla
-Stir in flour and salt until well mixed
-Chill dough for easier handling; shape dough into balls using slightly rounded teaspoon full of dough
-Slightly beat egg whites; dip balls into egg white, then roll in nuts
-Place balls 1 inch apart on ungreased sheets, press deep hole in center of each cookie with thumb
-Bake 8-10 minutes or until lightly browned; remove from sheets and fill centers with jam once cooled
