3&1/2 teaspoons coarsely chopped fresh rosemary
1/4 cup pine nuts, toasted & more for topping before baking
2&1/4 Cups flour- used in 2 cup and 1/4 cup increments
1 teaspoon baking soda
1/2 teaspoon ground ginger
1/4 teaspoon salt
1&1/4 Sticks of butter, softened
1 Cup plus 2 teaspoons sugar
2 Tablespoons olive oil
3 Tablespoons heavy cream
1 Large egg

Heat oven to 325 degrees Bake 13 minutes

Finely chop rosemary in food processor, add pine nuts, pulse until coarsely ground

Measure and put flour, baking soda, ginger and salt in large bowl, then

Whisk in rosemary and pine nuts mixture

Beat butter and sugar until light in color, about 3 minutes, then add olive oil, blend

Reduce mixer to low speed and add 2 Cups of dry ingredients, blend well

then add heavy cream, egg and last 1/4 cup of dry ingredients until combined

Shape into 3/4-inch balls, flatten with bottom of a glass (or whatever you have)

top each with 3 pine nuts. rotate pans 1/2 way through cooking time
