2 Sticks of butter, softened
1 Cup sugar
1 Pkg Jello Pistachio INSTANT pudding- 3.9 oz
2 Eggs
1 teaspoon baking soda
2 Cups flour
1/2 Cup white chocolate chips

For rolling,

1/2 Cup crushed pistachios

Heat oven to 350 degrees Bake for 9-12 minutes

Beat butter, sugar and pistachio Jello until well combined

Add eggs and blend till smooth

Whisk together flour and baking soda, then add to wet ingredients

Fold in white chocolate chips

Create small balls or small cookie scoop and roll in crushed pistachios

Place on a parchment lined cookie sheet and bake until light brown on edges

They are really easy to make, especially the night before someone needs cookies

They are VERY sweet so maybe leave out white chocolate chips, or not
