Ingredients: - 1 recipe pastry for a 9-inch double crust pie - ½ cup unsalted butter - 3 tbsp all-purpose flour - ¼ cup water - ½ cup white sugar - 8 granny Smith apples, peeled, cored & sliced. (I used 7 & it was perfect the amount) - 1 tsp vanilla extract - 1 tsp cinnamon - dash of nutmeg - egg white - ½ cup brown sugar

Directions: **READ NOTES!!**
1.) Preheat oven to 425ºF. - Melt the butter in a saucepan. - Stir in the flour to form a paste. - Add the water , white sugar, brown sugar & spices and bring to a boil. - Reduce the temperature & let simmer for 5 minutes, then add in the vanilla.
2.) Place bottom crust in your pan. - Brush bottom of the crust with egg whites to keep it from getting soggy. - Fill with apples, mounded slightly. - Cover with lattice work crust. - Lightly brush egg whites over lattice & sprinkle cinnamon sugar on top - Gently pour the sugar & butter liquid over the crust. Pour slowly so that it does not run off.
3.) Bake for 15 minutes in the preheated oven. - Reduce the temperature to 350ºF & continue baking for 35 to 45 minutes, or until apples are soft. (45 minutes was good for me) |

Notes: * Have the bottom crust ready & in the dish before starting on the liquid. - Do the top lattice crust & put it in the fridge until you're ready to use it.
* Mix half of the liquid in with the apples
