1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs, well beaten
1 tsp. vanilla
1 ½ cups flour
1 tsp. salt
1 tsp. baking soda
3 cups quick oatmeal
½ cups walnuts

Directions:
Directions:
Mix and roll into rolls 1 ½-2 inches. Using floured wax paper to shape roll. Refrigerate or freeze. Slice and fill one slice on bottom and on top. Sprinkle with sugar. Bake at 350° F for 8-10 minutes.

Filling for double batch

1 ½ cup raisins
1 cup dates
1 cup sugar
1 cup water
2 Tbsp. cornstarch
1 Tsp. or 1 Tbsp. lemon juice

Cook raisins, dates, sugar, water and cornstarch until thick. Add lemon juice.
