1/3 c. Butter, Softened
1/3 c. Coconut Sugar
1 Egg
1 tsp. Vanilla Extract
1/2 c. Almond Flour/Cassava Flour
1/4 c. Vanilla Protein Powder
1/2 tsp. Baking Soda
1/4 tsp. Salt
1/4. c. Chocolate Chips

Directions:

1. Preheat oven to 350º F and line baking sheets with parchment paper.

2. In a medium bowl, combine butter and coconut sugar, mixing well. Add in egg and vanilla and mix to combine

3. Add in flour, protein powder, baking soda, and salt mixing until fully combined. Fold in chocolate chips.

4. Scoop cookie dough onto baking sheet. Bake for 10-12 minutes.

5. Remove cookies from oven and cool on baking sheet for 5 minutes, then transfer to a wire rack.
