3 1/2 cups chopped onion (about 5 med, cubes 1/2 to 3/4 inch, like bread crumbs)

3 cups chopped celery

1 TBSP butter

1 cup (or more) water or turkey stock

1 TBSP salt

1/4 tsp black pepper

4 1/2 cups MacIntosh apples, peeled and cubed into 1/2 inch cubes

Buttered casserole dish, bottom and sides

20 slices bread, dried on 150 degree pan, cubed into 1/2 inch cubes OR substitute
1 package potato bread stuffing cubes. We use packaged stuffing cubes, put on
baking pan, bake for 5 mins at 300 degrees before adding to pot.

Melt butter in large pot on low heat. Add onions, celery, 1 cup water, salt, pepper to pot. Raise heat to medium high, stir for 5 minutes. Turn heat to low and cover. Cook until onion and celery look translucent (about 5 mins, may need more). Add bread and more water (about 1 to 1 1/2 cup) until bread is soaked. Cook for 5 mins. Add apples, gently mixing to avoid mashing apples. Cook for 5 mins. Transfer to buttered casserole dish and cover. Bake at 325- 350 degrees for 1/2 hour or until dressing bubbles.

Tips: Put cubed onion and celery in one bowl. Use second bowl for cubed apples. This makes it easier when adding ingredients to large pot on stove, as ingredients have different cooking times. Use a long handled wooden/other spoon for mixing.
Stuffing can be covered in casserole dish and stored in refrigerator the night before baking. Bake according to directions above. Leftovers can be microwaved until hot.
