1 cup soft butter
1 cup packed brown sugar
2 eggs
2 tsp. vanilla
2 cups flour
1 tsp. baking soda
½ tsp. salt
¼ tsp.k cinnamon
3 cups quick cook oats
1 cup dark chocolate chips

chopped walnuts (optional)

Directions:
Directions:
Preheat oven to 350º.

Cream together butter and sugars until smooth. Beat in eggs, one at a time, then add vanilla.
Combine flour, baking soda, salt and cinnamon. Stir into cream mixture till blended.
Mix quick oat, add walnuts (if you are using them), and chocolate chips into mixture. DO NOT OVER MIX.
Drop heaping spoonful's onto ungreased cookie sheet. Bake 10-12 minutes.
Cool on wire rack.

You can roll each cookie into a ball before cooking and then freeze on a cookie sheet. Place into a zip lock baggie and freeze. To bake, take out of freezer and thaw. Bake according to directions and there you have fresh cookies!
