1 lb unsalted butter, softened
4c sugar
1 tsp salt
2eggs
2 tsp vanilla (sometimes I use a little almond extract with vanilla, but I don’t think grandmom did).
4 c flour
2 1/2 tsp baking powder.
2 tbsp milk (If needed)

ICING
1 stick of butter,
1 pkg cream cheese.
Mix together. Add
1 tsp vanilla or almond extract.
4 C* confectioners sugar.
a little* milk if needed

*for consistency Like grandmom, I don’t measure. Just get it to typical icing consistency. Add a little milk as needed

Cream the butter, salt, and sugar, together.
Beat in eggs and vanilla,
Add flour and baking powder slowly with mixer at low speed.
I don’t usually need the milk. I bake a lot so I just know how the batter needs to be. You don’t want it too dry though either.

I put down a long sheet of waxed paper, dust with some flour and put about 1/4 batter in the middle. Flatten some with your hand. Sprinkle top with more flour and lay another sheet of waxed paper over it and roll it out to about 1/4 inch thick.
Slide the rolled dough onto a cookie sheet and continue to roll as above with the rest of the dough. (4 Layers). and chill, I put it in the freezer for about 10 minutes. If it freezes just wait a few minutes to cut out. When you pull one layer out of the freezer remove the top piece of waxed paper and lay it back over the dough. Then carefully flip it over and remove the new top layer. Doing this helps keeping the dough from sticking to the waxed paper. Cut out cookies and place on cookie sheet leaving room for cookies to spread. I try to put similar sized cookies on each sheet as the smaller ones take less time to bake. Bake at 350 degrees. About 5-7 minutes. I just keep an eye on them. Cool completely then Ice and decorate.

Mix together Butter and Cream Cheese.
Add vanilla or almond extract.
Add confectioners sugar. Maybe 4 cups? Like grandmom, I don’t measure. Just get it to typical icing consistency.
Add a little milk as needed

It took me a while to work this out as she just gave me the ingredients and approximate amts. You may need to bake them a time or two before you’re happy with them. Have fun. My grandkids love making them with me. This makes over 90 cookies. Enjoy and have fun!

When putting this collection of recipes together I realized it would not be complete without this recipe. When I asked my cousin Lorrie if she had any idea about those cookies? She sent the following response within minutes!

"Funny you should ask. I begged her (grandmom) for that cookie recipe and she wouldn’t give it to me. Finally I realized there wasn’t a written down recipe so we went through it step by step. I make them every Christmas first with my kids and now with my grandkids. They are so many of my friends' favorite cookies!"
