1 ½ cups oil
2 cups sugar
2 eggs
1 tsp vanilla
3 cups peeled and chopped apples (3-4 apples)
1 cup chopped pecans (optional)
3 cups flour
1 tsp baking soda
1 tsp salt
1 ¼ tsp cinnamon (divided)
¼ cup powdered sugar

Directions:
Directions:
In a large bowl, blend together the oil and sugar.
Add the eggs and mix well.
Stir in the vanilla, apples and pecans (if using).

In a separate bowl, sift together the flour, baking soda, salt, and 1 tsp cinnamon.
Add the dry ingredient mixture to the wet ingredient mixture.

Pour the batter into an ungreased 9x13 pan.

Mix together the powdered sugar and remaining ¼ tsp cinnamon.
Sift evenly over the top of the cake batter.

Bake at 350º for 40-50 minutes.

Sydney and Mackenzie’s grandma made this apple cake for family functions and also whenever she visited us in California. We enjoy it every year after a trip to Apple Hill!
