"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

2 cups butter
1 cup brown sugar
4 cups flour

Directions:
Directions:
Cream the butter and sugar with beaters. Slowly add in the flour.
Knead it on the cupboard for a long time.

(That's all was on mom's recipe. So... make small balls and drop them onto a cookie sheet. Lightly flatten each cookie with a fork. Bake at 350º until lightly brown.)

Personal Notes:
Personal Notes:
Mom always called her short bread, "whipped-shortbread" or "real-shortbread." This recipe is mom's "real short-bread." Mom would make small pie shape shapes, and leave it quite thick.
