3/4 cup shortening( no substitutions)
1 cup white sugar
1 egg
1/4 molasses
2 cups flour
2 tsp baking sofa
1/4 tsp salt
2 tsp ginger
1 tsp cinnamon
1 tsp cloves
White sugar to roll cookies in before baking

Directions:
Directions:
Cream shortening and sugar. Beat in egg and molasses. Combine dry ingredient and blend in. Shape into 1 inch balls. Roll in white sugar. Place 2 inches apart on slightly greased baking sheets. Bake in 350° oven for 8 to 10 minutes. Do not over bake! Cookies should be slightly soft when remove from the oven and you know they are done when you see slight cracks in the top of the cookie

I am not fond of a ginger snap or even a gingerbread man cookie but I do like a good ginger cookie and this one is my all-time favourite. It’s crispy on the outside and slightly soft in the middle making it chewy. You get quite a bit out of a batch so it’s definitely a must for me when I’m making up Christmas platters or giving away Christmas baking to family and friends.
