2 c. sifted all-purpose flour
2 T. double acting baking powder
2 tsp. sugar
½ tsp. salt
½ tsp. cream of tartar
½ c. shortening
¾ to 1 c. milk

Sift dry ingredients into bowl. Cut in shortening until like coarse crumbs. Make a well, add milk all at once. Stir quickly with fork till just mixed. Do not over mix. Turn onto lightly floured surface. Dough should be soft. Knead gently about 10 strokes. Roll or pat dough to ½ to ¾ inch thick. Dip 2 ½ inch biscuit cutter into flour; cut dough straight down. Bake on ungreased baking sheet in very hot oven (450º) for 10 to 12 minutes.
