1 cup butter (can use vegetable butter)
¾ cup sugar

1 egg, unbeaten
1 cup carrots, cooked & mashed
1 tsp vanilla extract
2 cups flour
2 tsp baking powder
½ tsp salt

Tools
mixing bowl, medium sized
electric mixer
sifter
cookie sheet, greased
Directions:
Directions:
Mix dry ingredients in a small bowl.

Combine first two ingredients in mixing bowl.

Add eggs, carrots, and vanilla. Turn mixer off.

Sift dry ingredients together into the mixing bowl, pouring them into the sifter and sifting into the bowl.

Mix ingredients together.

Drop by spoonfuls onto cookie sheet.
