Crust Ingredients:
1 1/2 Cups Flour
1 1/2 Teaspoon Sugar
1 Teaspoon Salt
1/2 Cup Vegetable Oil
2 Tablespoons Cold Milk

Filling Ingredients:
4 Eggs - Separated
1/4 Cup Lemon Juice
Grated Rind of 1 Lemon
1/2 Cup Sugar to add to Egg Yolks
1/2 Cup Sugar to add to Egg Whites After Partly Beaten Stiff

Crust Instructions:
Mix dry ingredients. Whip oil & milk together. Pour over dry ingredients. Mix with fork until completely blended.
Press evenly with fingers into a pie dish. Bake at 450 degrees for 10-15 minutes.

Filling Instructions:
Beat egg yolks, add sugar gradually. Then add lemon juice with the lemon rind.
Cook & stir over hot water (double boiler) until custard forms.

Remove from water; set aside.
In a separate bowl, beat egg whites & other 1/2 cup sugar until peaks form that hold shape.
Fold 1/2 of the egg white mixture into the egg custard; pour into a baked pie shell.
Spread the remaining egg whites over the custard and bake at 375 degrees for 20 minutes until golden.

Eyal's Great-Grandma, Joyce Sachter, was a WHIZ in the kitchen. Everything she made was delicious (and of course made with love). This is one of her signature recipes and one of our family's favorites. Grandma Joyce would make this pie for holidays, special celebrations and whenever one of her grandkids or great-grandkids would bat their eyes and ask her to please make her wonderful pie. Eyal's sister, Liat, now makes this pie regularly, at the request of the entire extended family. We always think about Grandma Joyce as we are enjoying this delicious dessert.
