Ingredients: 2 cups + 2 TBS flour ½ tsp baking soda ½ tsp salt 1 tsp ground cinnamon
1½ sticks butter, unsalted, melted & cooled until just barely warm 1 cup brown sugar, packed ½ cup sugar
1 egg, large + 1 egg yolk, large 2 tsp vanilla or Mexican vanilla extract
1 cup caramel bits (can cut up pure caramel candies, use caramel chips, or caramel baking melts) 1-2 pears, finely diced (about 1 cup)
extra caramel bits
OPTIONAL (if making thumbprint-style cookies) jam OR preserves, pear, peach, OR raspberry piping bag (optional, can use a spoon)
Tools 2 bowls, medium whisk electric mixer spatula, rubber (for folding) cookie dough spoon (optional, can use regular spoon and hands) 2 baking sheets, lined with parchment paper

Directions:Preheat oven to 325º.
Whisk the flour, baking soda, salt and cinnamon together in bowl. Set aside.
In separate bowl, use electric mixer to cream together butter and sugars until well blended.
Beat in egg, yolk, and vanilla until combined.
Add in the dry ingredient mixture and beat on low speed until *just combined*.
Carefully fold in the caramel bits and diced pears until combined.
Form the dough into TBS-sized balls.
Place on a cookie sheet at least 2½" apart, and then dot on top with a few additional caramel bits.
Bake cookies until the outer edges are golden and begin to slightly harden, about 15 minutes.
Remove from oven and let the cookies cool on the baking sheets.
Note: You can add a bit of pear/peach/raspberry preserve or jam to each cookie if desired. Simply press down on the cookies gently, in the centers, when removing them from the oven. You will want to work quickly. After they have cooled, spoon or pipe the preserves or jam into the centers. |
