1 cup Butter
1 1/4 cup Brown Sugar
1/4 cup Sugar
1 Egg
1 Egg Yolk
1 Tablespoon Vanilla
2 1/4 cup Flour
1 teaspoon Baking Soda
1 teaspoon Sea Salt
3/4 cup Butterscotch Chips
1/2 cup Semisweet Chocolate Chips (or a bit more!)
1 cup Pretzels chopped (best with mini pretzels in traditional knot shape)
Sea Salt (optional)

Directions:

- In medium saucepan, melt butter over medium heat. Bring it to a slow rolling boil. Stir until butter becomes dark gold or amber. Careful, since it burns easily. Remove from heat.
- Let butter cool for 15-20 minutes.
- Preheat oven to 350º.
- Stir in brown sugar, sugar, eggs and vanilla into the cooled butter mixture. (If you add while butter is hot, it will start to cook eggs and ruin cookies.) Stir to combine.
- Add flour, baking soda, and salt. Fold all ingredients together.
- Stir in butterscotch chips, chocolate chips, and pretzels.
- Drop dough on baking sheet. If desired, sprinkle sea salt on top.
- Bake 9-13 minutes, or until edges are lightly golden.
