1˝ cup diced left over turkey
1 quart turkey broth( Grandma Brown always made her broth by boiling her turkey bones)
1 onion chopped
1˝ Tbs butter
˝ cup rice
Salt and pepper to taste
Grated Cheddar Cheese

Directions:
Directions:
In a large frying pan cook the onion in the butter. Add the broth and bring it to a boil and then sprinkle the rice in slowly. Cover the pan with a lid and simmer slowly about 25 minutes or longer until the grains swell and become soft and tender. ( stir from time to time). Add diced turkey. Salt and pepper to taste. Top with grated cheese

This recipe is from my Grandmother Brown . She used every piece of the turkey, never wasting anything. Actually the Curry kids loved her leftovers especially this recipe.
