1 C Butter
½ C Sugar
1½ C Flour
1 tsp Vanilla
1 C Potato chips, crushed
2 C (or to taste) Semi-sweet chocolate chips, melted
1 C (or to taste) Mixed nuts, chopped, (optional)

Pre-heat oven to 350ºF Line a cookie sheet with parchment paper

In a large bowl, cream together butter and sugar. Add flour, vanilla and potato chips, mix until well blended.
Drop by teaspoonfuls on prepared cookie sheet. Bake for about 15 minutes until edges are slightly brown. Remove from oven and cool. Once cool, dip half of the cookie in melted chocolate, then double dip into nuts, if using. Return to parchment paper to set.
