1 cup all-purpose flour
½ tsp baking soda
¼ tsp salt
6 TBS butter OR margarine
⅓ cup granulated sugar
⅓ brown sugar, packed
1 tsp vanilla extract
1 egg, large
6-ounces semi-sweet chocolate, broken into pieces
½ cup walnuts, coarsely chopped
¼ cup peanut butter chips or caramel chips (optional)

saucepan, 3-quart
whisk, wire (can use fork instead)
pan for large cookie, round, at least 8" diameter, greased
spatula, metal OR small rolling pin
wire rack

Directions:

Preheat oven to 375º.

Combine flour, baking soda, and salt in bowl. Mix well & set aside.

In pan, melt margarine/butter over medium heat. Use wire whisk to stir in sugars, vanilla, and then egg, until mixed.

With a spoon, stir in the flour mixture you set aside earlier, a little at a time. Stir until just blended.

Stir in chocolate, walnuts, and chips (optional).

Spoon batter onto center of cookie pan. With a spatula, flatten and spread it into an 8" round.

Bake 20-23 minutes, until cookie is golden-brown.

Cool on rack for 1-2 minutes, then slice into 16 wedges.

Gobble up while warm!

A VERY KOOKY COOKIE CAKE

"I don't remember exactly when or why I fell in love with the cookie cake idea, but I remember I began really wanting this "cake" for my birthday. It may have been because it was a giant cookie, or because it was so different from what everybody else did at birthdays. The novelty of a giant cake-sized cookie was pretty darn cool!

"My mom knows that I'm not as fond of the edge pieces. I always got to pick my piece first. I liked the center, and Mom always baked this cake so that it would be soft, but not gooey. I always liked it best warm, although I would never say 'no' to the leftovers, either!

"Mom was always big on finding something I really wanted. Sometimes she had to get very creative about it. Like, one year, I wanted a Smurf® cake. (Because Ebay® was not yet created!) She could not find any pan to make the Smurf cake.

"The best she could find was a football helmet, which doesn't sound at all like it would work! But she turned it upside-down and somehow transformed it into a magical Smurf when she made the cake! Pure Mom Power there!!!!"
