1½ cups butter
1 cup brown sugar
1 egg
1 Tbl vanilla
2½ cups quick oats
2 cups flour
½ tsp salt
1¾ cups chopped nuts, fine
⅔ cup fruit preserves
Directions:
Directions:
Beat butter and sugar until fluffy.
Beat in egg and vanilla.
Add quick oats, flour, and salt. Mix well.
Form into 1 inch balls. Roll each ball in finely chopped nuts.
Place 2 inches apart on an ungreased cookie sheet.
Press the center of each cookie with your thumb. Fill with preserves.
Bake in a 350º oven for 12 to 15 minutes until golden brown.
