3 ½ c flour
2 tsp baking powder
½ tsp salt
¾ c butter
1 ¼ c brown sugar
1 egg
2 T milk
1 tsp vanilla
1 jar of mincemeat or 1 pkg mincemeat-prepared





Directions:
Directions:
In a mixer, cream together brown sugar and butter.
Mix in egg, milk and vanilla.
Sift dry ingredients together.
Slowly mix in dry ingredients.
Refrigerate dough for 30 minutes.

Pre-heat oven to 375º
Roll out dough and use 3" round cookie cutter to cut out circles. (You can use any shape of cookie cutter, but the circles are the easiest)
To assemble cookies, put one spoon of mincemeat on a cookie circle. Top with another circle and press the edges together.
Bake for10-12 minutes or until done. Edges should be slightly browned, but not crispy.

These cookies were a specialty of my grandmother, Joan Jones. She would make them during the cold winter months, particularly at Thanksgiving and Christmas. When I was little, she would use a donut cutter to cut a small circle out of the tops so that they looked like little mincemeat volcanoes and I've called them volcano cookies ever since. My mom and my sister and I still carry on the tradition of making them for our holiday dinners.
