Ingredients: 1/2 cup butter or shortening 1/2 cup sugar 1 egg 1 cup molasses 1 tablespoon lemon juice 3 1/4 cups sifted flour 1 teaspoon cinnamon 3/4 teaspoon ground cloves 1/2 teaspoon ginger 1 teaspoon fresh ginger root, minced ( I added this for more ginger flavor) 2 teaspoons baking soda 1/2 teaspoon salt 1/3 cup boiling water

Directions:1. In the bowl of a large mixer add the butter and sugar. Beat on high speed until light and creamy. Beat in the egg. Beat in the molasses and lemon juice.
2. Sift together the flour, spices, baking Powder and salt. With the mixer on low speed, pour in half the flour, then the boiling water and finally the remaining flour. Mix to combine all. Cover and place in the refrigerator for a few hours or overnight.
3. Preheat oven to 350 degrees. Grease or place parchment paper on 2 baking sheets.
4. Scoop 2 tablespoon batter on prepared sheets spacing 2" apart. About 12 per sheet. Bake in preheated oven for 11 minutes. Allow to rest on baking sheet for 5 minutes before placing on cooling racks.

Notes: I found this recipe in Grandma's recipe box in Canada. One tip, don't under cook these cookies or they will fall and not be "plump"!
