Sugar Cookies with Royal Icing Recipe

1 ¼ cup all-purpose flour
½ cup butter, room temperature
½ cup sugar
1 small egg
1 tsp vanilla extract
1 pinch salt

Icing:

3 ounces pasteurized egg whites
1 teaspoon vanilla extract
4 cups confectioners' sugar

In a big bowl cream the butter and sugar.
*(seriously make sure the butter is room temp. DO NOT just heat it up in microwave. It will ruin the cookies. Let the butter sit out over night at least.)
*(note #2 at this step. Do not skip this step^. You have to cream everything together until it turns almost white.)
Add vanilla and egg. Beat until smooth.
(use good vanilla, it makes a world of difference)
Add flour and salt. Combine.
(the dough will feel a little dry at first. But don't add anything. The flour will absorb the butter in the next step)
Cover and refrigerate at least an hour. Over night is even better. Since I typically make a bunch of batches at a time I divide up the dough and wrap it in plastic wrap and place in fridge.
*BIG SECRET HERE: when you go to roll out the dough DO NOT use flour on your board/rolling pin. Use powdered sugar instead.
Roll out dough into roughly 1/2 inch and punch out with cookie cutters.
Place cookies on greased cookie sheet.

Bake at 350 for 8-12 minutes.

(for the first couple batches WATCH THE BOTTOMS. Start checking them at 8 min and continue checking every minute or two until the BOTTOM is golden. If you wait till the top is golden the bottom will be burned.)
Remove to a cooling rack right away and let cool.

Icing:

Throw everything in a bowl and mix until you get stiff peaks. Depending on how many batches you are making at one time 5-7 minutes. You can add sugar if it seems a little runny. You can also add food coloring at the end.
