Oatmeal, Cranberry and Chocolate Chunk Cookies Recipe

1 C all-purpose flour
¾ tsp ground cinnamon
½ tsp baking powder
½ tsp baking soda
½ tsp fine sea salt
1 stick unsalted butter, at room temperature
½ C light brown sugar
½ C sugar
1 large egg, at room temperature
½ tsp pure vanilla extract
2 C old fashioned oats
1 C dried cranberries, or ½ C dried cranberries + ½ C dried chopped apricots
1 (4 oz) 60% cacao bittersweet chocolate bar, Ghirardelli, chopped into ¼-inch chunks, or ½ C chocolate chunks

Put an oven track in the center of the oven. Preheat oven to 350ºF. Line 2 baking sheets with parchment paper and set aside.

In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda and salt. In a stand mixer fitted with a paddle attachment, beat the butter and sugars together until light and fluffy, about 1 minute. Add egg and vanilla and beat until smooth. With the machine running, gradually add the flour mixture. Add the oats, cranberries, apricots (optional) and chocolate chunks. Mix just until incorporated (dough will be stiff). Roll into balls or use a scoop, to make slightly rounded mounds of the dough into 1 or 2-inch diameter balls, depending on the size of cookie you want. If using a 2-inch size ball, arrange 6 balls of dough, spaced evenly apart, on each baking sheet. Using the back of a spoon, flatten the tops slightly and bake until the cookies are slightly golden on the edges, about 13 to 15 minutes. Allow the cookies to cool on the baking sheet for 20 minutes before serving. Don't overbake.

These are so delicious. Another great recipe by Giada. I love to make these at Christmas time, as they are so festive, and maybe slightly healthy.

You can also make this recipe DF by using vegan butter and DF chocolate chunks.
